Pumpkin, carrot, apple and cinnamon Bread
The sweetness from the cinnamon and fruit muesli works so well in this bread as it really brings out the flavour of the pumpkin, making it the perfect Halloween treat.
Ingredients
- 1 cup plus 2 tablespoons of Primroses kitchen carrot, apple and cinnamon muesli
- 3/4 cup of milk
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 medium eggs
- ½ cup brown sugar
- 1 tbsp maple syrup
- 1 cup pumpkin puree
- 1/4 cup vegetable oil
- 1 teaspoons vanilla essence
Preheat your oven to 350 degrees or gas mark 4.
Brush a little oil on a 9 x 5 inch bread tin.
In a small bowl combine the muesli and the milk leaving it to soak and soften while you prepare the other ingredients.
In a large bowl add the flour, baking soda, baking powder and salt and mix.
In a separate bowl beat the eggs, then add the sugar, oil, syrup, pumpkin and vanilla then mix with a whisk.
Gently add the softened muesli to the egg mixture.
Then fold in the flour to make a thick batter.
Pour your batter into the bread tin and sprinkle the final 2 tbsp of muesli for that added crunch.
Place in your heated oven and bake for 55 minutes until cooked through.
To check if your loaf is cooked inside, simply stick a metal skewer into the middle of your loaf and if it comes out clean then the loaf is fully cooked. If the skewer has cake mix on it then pop it back in the oven for another 5 minutes and try again.
Once cooked take your loaf out of the tin, place on a rack and slice once cool.
