Gingerbread Pancakes with Chocolate Almond and Chia sauce

A delicious wintery pancake recipe perfect for a cosy afternoon by the fire by our guest blogger the wonderful Lottie from Lottie’s Little Kitchen Blog

5 pancakes

1 chia egg (or use an egg if not vegan)
1 drop of liquid stevia
1 cup wholegrain flour
1 cup instant oats
1 cup plant milk (I replaced 1/2 cup with Rebel Kitchen Chai Mylk)
1/2 tbsp baking powder
1 tsp ginger
1/2 tsp cloves

To start, prepare the chia egg ( grind 1tbsp of chia seed to a meal and mix with  3 tbsp water), mix everything, preheat the pan, put big batches of the batter on the pan and watch the magic happen (but still remember to turn them in time!). Serve with any fruit or sauce - I made a chocolate almond sauce using Primrose's Kitchen Raw Almond and Chia Butter (because chocolate and christmas just belong, right?).


2 tbsp raw almond and chia butter , 1 tbsp water and 1 tbsp cacao powder blended together.
