Banoffee Parfait

Preparation time: 5 minutes
Serves: 4

Ingredients for the base

16tbsp (4tbsp per person) of Primrose’s Kitchen organic turmeric and banana granola

Ingredients for the vegan caramel sauce

8 medjool dates, stone removed

180ml water

5tbsp (unsweetened) smooth peanut butter or tahini

a pinch of salt

For the top layer

300ml (vegan) yoghurt

1 banana, sliced or other fruit for decorating (optional)


To make the caramel sauce, place the dates, water, peanut butter and salt in a deep bowl and blend with a hand blender until smooth and nicely combined.

Next take 4 glasses and make the parfait by evenly distributing the granola first, then the caramel sauce and finally the yoghurt and toppings. You can serve immediately or keep in the fridge until ready to serve.
